Chefs know that most accidents happen with cheap knives. Surprisingly, sharper knives results in fewer injuries and duller knives result in more injuries. The plethora of cutlery options makes it hard for many customers to know where to start. It is most important to invest in a set of quality cutlery as it will last much longer than cheap cutlery and save you money in the long run.
Characteristics to look for in knives include a full tang, the type of metal used, and the type of handle. A higher-scale knife has a full tang, which means that the metal from the knife blade runs down through the centre of the handle as well. This tang gives the knife balance. The quality of the metal used for the knife blade is exceptionally important as well; although steel is typically used, steel with a higher carbon count indicates a superior metal. When carbon is added to steel, it adds strength and enables the blade to stay sharp for longer.
Handles are typically either wood or a composite material; in either case, you should feel that it is very well attached to the tang of the blade. In cheaper knives, handles frequently chip or crack apart after a span of time. Although composite material handles are slightly easier to care for than their wood counterparts, no set of valuable knives should ever be placed in the dishwasher, as it will ruin the metal. Instead, you should always wash knives by hand.
When well taken care of, high quality knives can easily last a lifetime. They may need to be re-sharpened after a period of time, which many cook shops can do, or the manufacturer may do. You will soon find that a set of excellent knives will make your cooking preparatory work so much quicker and easier.
Purchasing a set of knives - rather than each one individually - can greatly cut down cost if you are looking to replace all of your knives.
