A fish kettle is another more meal-specific pan, but does an excellent job in what it is meant to do. A fish kettle is an oblong, very long and relatively skinny pan, with rounded edges on the short end. It is shaped to most efficiently contain a large fillet or an entire fish. The pan has a lid and two small handles at the short end. Some fish kettles come with a rack inside for laying your fish on top of, so that the fish does not cook in its own juices. The rack allows for air circulation and even cooking all the way around the fish. The rack can also help keep the fish in one piece while removing it after it is finished cooking, making for a more spectacular presentation at the dinner table.
Fish kettles typically come in aluminium, stainless steel, and copper. Copper conducts heat the best and will therefore cook your fish most evenly, but aluminium and stainless steel are excellent, lower-cost alternatives. In addition, copper requires polishing the outside to maintain its brilliance, whereas aluminium and stainless steel do not.
